Here’s a recipe that my dad taught me. Two fairly simple, yet tasty dishes.
Ingredients (serving size 1)
Hot Oil Chicken:
- 2 or 3 chicken drumsticks (depending on how hungry you are!)
- 1/4 cup soy sauce
- 1/2 tsp minced garlic
- 1 green onion
- 1/3 cup vegetable oil
Tomato Fried Rice:
- 2/3 cup uncooked rice
- 2 small Roma tomatoes
- 1/4 small sweet onion (chopped)
- 1/4 cup soy sauce
- 1/4 tsp minced garlic
- 1/4 tsp sugar
- 1 tsp sesame oil
Instructions:
Boil the drumsticks in water until cooked all the way through. In the meantime, cook the rice in a rice cooker or pot on the stove.
Prep the Roma tomatoes and sweet onion, chop both into small pieces. Also prep the green onion by slicing into 1 inch pieces.
When the rice is done, saute the sweet onion and garlic in a pan or wok over medium heat. Add the tomatoes when the onions are halfway caramelized (after 1-2 minutes). Cook for an additional 3 minutes. Then add the rice, soy sauce and sugar. Mix well. Add the sesame oil about 2 minutes before removing the rice from the stovetop.
When the drumsticks are cooked. Remove them from the water, and remove any skin that is still on the meat. Heat the vegetable oil on high in a small sauce pan. While the oil is heating up, place the drumsticks in a pan (I usually like to cover the pan with aluminum oil beforehand). Drizzle the soy sauce over the drumsticks, and sprinkle with the minced garlic and green onions.

When the vegetable oil in the saucepan is boiling, quickly pour the oil over the drumsticks.
