Sweet Potato Pork Chops

Here is another one of my dad’s famous recipes: Sweet Potato Fried Pork Chops. This was one of my favorite meals that my dad would make when I was growing up. It’s a fairly simple recipe with a little bit of prep time.

Ingredients:
4 Pork Chops or Pork Loin Steak (I prefer the boneless cuts)
1/2 cup soy sauce
1 tablespoon minced garlic
1 1/2 cups sweet potato flour
3 cups vegetable oil

Let’s Cook!
1. Marinate the pork in the soy sauce and garlic for at least 3 hours (keep refrigerated).
2. When ready to cook, take the pork chops out and flatten the meat with a meat tenderizer.
3. Heat up the vegetable oil in a deep pan or deep fryer.
4. While the oil is heating up, coat the pork chops with sweet potato flour.


5. Fry the pork chops in the fryer for about 5 minutes each or until the meat is cooked through.

You can make virtually any side dish to go with this main dish.  We made Chinese broccoli with oyster sauce and Sweet potato rice as our side dishes.
