Chicken Pad See Ew

Pad see ew is the ultimate street food in Thailand, and one of my favorite Thai dishes. And guess what – it’s an amazingly simple recipe.

Traditionally, Chinese broccoli (gai lan) is used in pad see ew, but you can also use other vegetables, such as regular broccoli, carrots or bok choy.  Here’s my version of chicken pad see ew:

Ingredients: (2 servings)
- 1/3 lb. extra large flat rice noodles
- 1/2 lb. chicken cut into bite size pieces
- 4-5 cups Chinese broccoli cut up
- 3-4 Tbs. olive oil
- 1 Tbs. minced garlic
- 2 tsp. oyster sauce
- 2-3 Tbsp dark soy sauce
- large pinch of sugar, to taste
- medium pinch of black pepper, to taste
- 2 large eggs
- 1 tsp. chili paste (optional, if you like an extra kick!)

Let’s Cook!
1. Soak flat rice noodles in warm water for 9-10 minutes. Drain then set aside.


2. Cut Chinese broccoli into pieces that are two to three inches long.


3. Scramble the eggs in olive oil in a small saucepan, then set aside. (I didn’t use eggs this time in my recipe)
4. Heat olive oil in a wok over medium high heat. Sauté the minced garlic in the olive oil for about half a minute few seconds until they are sizzling nicely, then add the chicken.
5. Stir fry the chicken until the meat is cooked through, about 4-5 minutes.
6. Crack the eggs into the wok and cook for approximately 1 minute.
7. Toss in the flat rice noodles along with the soy sauce and chili paste (optional).
8. Spread the meat and noodles out over heated surface of the wok, so that the mixture can be evenly heated.
9. Add the Chinese broccoli and oyster sauce, and continuously fold the vegetables into the noodles so that they cook well.
10. Add the sugar, black pepper and scrambled eggs. Stir and mix the mixture well, and then let cook for another 2 minutes.
11. Serve and enjoy!

Note: You can also use beef, pork, shrimp or tofu instead of chicken.  With the beef and pork, you can cook similarly to the chicken instructions.  With shrimp and tofu, you will use less cooking time so that the protein does not overcook.
