I keep reading articles online and in magazines about how great plant-based diets are for you, so I thought I would give up land meat (beef, pork and poultry) for two weeks. As a foodie, I love challenging myself in the kitchen – and I’m pretty terrible at cooking seafood – and I also feel the need to expand my vegetable prepping skills. So it’s a win-win situation I think.
I have done the vegetarian thing before. Ten years ago, from the middle of my senior year of high through the beginning of my second year in college. That time around, I didn’t eat any meat – seafood included. It wasn’t a health thing when I decided to do the vegetarian thing then, it was a humanitarian thing. I had just read The Jungle, and just couldn’t bring myself to eat meat.
So, the goals of my 14 day experiment:
1. See if a meat-free diet will make me feel healthier – both physically and mentally (perfect time, since I’ve been really bogged down in work lately – at my day job)
2. Expand on my cooking skills.
Day 1:
Didn’t have time to go grocery shopping today – my pile of work was beckoning me! So, I scrounged around for food that we already had around the house and this is what I came up with
Breakfast:
Slices of french baguette with Belle Chevre goat cheese spread
Cup of coffee
Lunch:
Pad See Ew – made with the same recipe as the blog post, minus the chicken
Mid Afternoon Snack:
1/2 cup Cookies N’ Cream ice cream – not exactly healthy, but I was bummed down with work and needed a little treat!
Dinner:
Tomato & Mozzarella Panini at Panera Bread – didn’t have the energy to make dinner before Kung Fu/Tai Chi class, so off to Panera we went! This panini was delish!
