Here was the first test run of a recipe that will be featured at The Whistle Stop Farmers Market in June! Since it will be strawberry season for the first few weeks of market, the recipes will feature… strawberries!
This was my first time cooking Mahi Mahi and I was a little nervous – please, do not overcook, or under-cook! But I must say, the dish came out wonderfully. I served it with a side of roasted red potatoes, one of my favorite side dishes.
I will likely be serving up a version with chicken at the market – not too confident about serving fish at an outdoors market. Or perhaps a vegetarian option, with tofu? Yikes. Not sure about that idea.
