Strawberry Shortcake

Ah, strawberry shortcake… one of my most favorite summertime treats! Using some of the delicious strawberries from our trip to Washington Farms, I finally got around to making one of my favorite desserts from scratch.

Shortcake ingredients:
- 2 cups flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons melted butter
- 1 egg
- 1/2 cup milk

    Strawberries:
    Cut up 2 cups fresh strawberries, and mix with 1/2 cup sugar.  Set aside in refrigerator.

    Whipped Cream:
    Okay, so I didn’t make this from scratch… just used the store bought kind.
    Let’s Bake!
    1. Preheat oven to 400 degrees.
    2. In a large mixing bowl, combine flour, baking powder, salt and sugar. Knead in butter, egg and milk.
    3. Using a rolling pin, roll dough out into 1/2 inch thick pieces, 3 inch diameter circles.


    4. Place dough on cookie sheet and bake in preheated oven for about 10 minutes, or until golden brown.

    Yikes, my fingers look kinda gross… yea, I’m slightly double jointed, I guess.  Sorry.

    5. Serve shortcake with strawberries and whipped cream.
    6. Enjoy!
