Fresh Tomato Dip

by Melissa on August 3, 2010

Here’s a very simple, easy (and quick!) tomato dip that you can make to use with chicken or just add water to make your own homemade marinara sauce.

Much healthier than the store bought kind, and tastier too!

Ingredients:
2 medium tomatoes
1 cup sundried tomatoes
2 cloves of garlic, finely chopped
fresh parsley, finely chopped
1/2 yellow onion
drizzle of extra virgin olive oil
red pepper flakes to taste
dash of salt & pepper to taste

Let’s Cook!
1. Quarter the tomatoes, cut the onion into a few chunks.
2. Combine all of the ingredients in a food processor or blender.
3. Blend the ingredients into a fine or chunky paste, depending on your preference.
4. Enjoy!
