Dear Paul,
It’s been three wonderful years since I married my best friend on August 8, 2009.
If I thought that last year was amazing, this year was even more memorable:
- We traveled to the Caribbean and went diving in Cozumel and Belize, spotting giant loggerhead sea turtles, manta rays and a young hawksbill sea turtle.
- You completed your first marathon, 26.2 miles – I’m so proud of you!
- A fun trip to Disney World
- A 2.5 week getaway to Alaska, Vancouver and Seattle.
If anything could make to appreciate and love you any more, it was our car accident in December. That was probably the scariest thing that I have ever experienced in my life.
Now we’re expecting our first child, a baby girl, in two months! Two months! That completely blows my mind. Our lives will change forever and I can not wait for what lies ahead. It’s no longer going to be “just the two of us,” but it’s going to be so much better.

Since Paul has a 9 to 5 job, we don’t have breakfast together very often. Thus turning weekend brunch into something that’s special to us. Paul and I usually head out to one of our favorite brunch spots, with Paul ordering either the pancake or french toast special.
We have enjoyed all sorts of pancakes and french toast from banana bread french toast to red velvet pancakes to the more common chocolate chip.
On our first anniversary, we did the whole “eat the top layer of a year-old wedding cake” thing. Which didn’t give me food poisoning as I had predicted, the cake kept amazingly well with just a slight bit of freezer burn.
Last year, we celebrated with carrot cake cupcakes, since carrot cake is something special to me and Paul. It was one of our wedding cake flavors.
So this year, continuing on with the carrot cake theme, we celebrated with carrot cake pancakes!

Breakfast is my absolute favorite meal of the day, and I love West Egg! I always order the same thing – a biscuit with bacon, sausage, egg, and cheese and a side of french fries. Not exactly healthy, but delicious. LOL. Those pancakes are about to go on my list of things to try. Hope you had an amazing anniversary!
Thanks Kimberly! I so wish we lived closer to West Egg so that I could go there everyday (okay, maybe every other day?) The black bean cakes with side of grits is my order there
