Back in the blogging saddle!
Someone should have really warned me about how tough and time consuming it would be when becoming a mom. In between taking care of an infant and work, I’m constantly scrambling to find some “me time.”
We finally got around to having a little get together for our friends to meet the newest addition to our family. So, a Sip n’ See brunch it was at our house! Here’s the guest of honor with her Aunt Jessi.
A grits bar was the feature of the morning, complete with a selection of toppings: shrimp, chicken sausage, cheddar cheese, sauteed onions, tomato gravy and chopped scallions.
If I was in full food blogger mode, I would have more photos for you, but the camera didn’t make its appearance until the food had mostly been devoured. Whoops. Sorry about that.
Not much can beat shrimp and grits for brunch.
Our guests made sure to take care of all those grits. Slow cooker grits are the way to go, especially when entertaining a group of people. Just toss all the ingredients in the slow cooker, stir occasionally and you get creamy, creamy grits without butter, cream and cheese.
Slow Cooker Grits
Ingredients (serves 4)
1 cup grits (not quick cooking or instant)
4 cups water
1 teaspoon salt, or to taste
2 tablespoons butter
Let’s Cook!
Combine grits, water and salt in a slow cooker on high. Stir slightly to combine the ingredients.
Let cook for 2.5 to 3 hours. Stir every 45 – 60 minutes to make sure grits don’t stick to side of slow cooker (add a little bit more water if grits start to look dry). When grits are done, turn slow cooker to Warm and still in butter.
Serve and enjoy!
